This American charcuterterie, located in the Olympic Mills building at 107 SE Washington St., is the first USDA-certified meat-curing facility in Oregon. It produces artisan sausages for many local businesses and for sale at Farmers Markets. The Olympic Mills location is also a restaurant that has generated buzz across the country.
